Gorgeous, this is a very fresh and low-calorie salad! It keeps you full because vegetables have volume. It’s good to eat huge salads every day 🙂

Ingredients
250 g green beans (young, thin, frozen/canned)
1-2 raw carrots (in strips)
cherry tomatoes (optional)
1 tbsp. olive oil
sol
Apple vinegar
parsley
seeds (sunflower, sesame, not calculated)
Preparation
Stew the green beans in a non-stick pan with a little water for a few minutes to soften. When it cools down, add the carrots cut into strips (I use a potato peeler) and cut into halves/quarters cherry tomatoes. Mix everything, add olive oil, salt and apple cider vinegar. Sprinkle with parsley. The salad becomes very tasty if sunflower seeds are added.
It’s tastier with young frozen beans, but you can use canned as well (see no added sugar). If the beans are canned, they do not need to be stewed.
