Gorgeous ❤️, red beets are great autumn-winter vegetable! The benefits of it are so many: it is a natural “purifier” of the body, a regulator of blood pressure, a “bomb” full of fiber and vitamins 🙂

Ingredients
120 g roasted beets
65 g banana
300 g/ml coconut milk (about 70 kcal per 100 g)
1 tsp grated fresh ginger
celery leaves/stems (optional)
mint
Preparation
Wash beets, dry it and wrap it in a sheet of baking paper without peeling. Bake at 180 degrees for about 45-50 minutes. Roasted in this way, beets retain their juices and can be used for all kinds of salads, quick appetizers, smoothies. You can bake a larger amount, refrigerate for 2-3 days and add to dishes.
Peel it after it cools down and then cut it into pieces and blend it together with the banana, milk, grated ginger and celery (add celery if you like its taste, otherwise you can miss it).
You can also try vanilla flavor 🙂
