Roasted beets salad with orange and apple (vegan)

Gorgeous 💗, if you love red beets, you will fall in love with this salad 🙂 And if not, give it another chance! Taste changes over time. Sometimes we suddenly start liking something we didn’t like before. It’s good to listen to our body, it always tells us what it needs, we just have to hear it 🙂

This salad is very fruity and sweet 🙂 Maybe you need it?

Roasted beets salad with orange and apple (vegan)
No fat added, only 170 kcal

Ingredients
240 g roasted beets (1 large or 2 small heads)
150 g apple
200 g orange
lemon juice
optional: nuts/seeds for sprinkling (not calculated)
dill/celery leaves

Method
Beets are washed, dried and without peeling wrapped in a sheet of baking paper. Bake at 180 degrees for about 45-50 minutes. Roasted in this way, beets retain their juices and can be used for all kinds of salads and quick appetizers. You can bake a larger amount, refrigerate for 2-3 days and add to dishes.

Peel the beets when cool and cut it into cubes, do the same with the orange and apple. Stir everything together with the lemon juice and sprinkle with celery leaves and nuts/seeds (optional). This salad is almost fruity, no additional fat 🙂
