Olivier salad with crackers with nuts and seeds

Gorgeous, do you like Olivier salad? 🙂 This dish is quite traditional in Bulgaria and it’s very often present at the table in the winter months.

So, following my passion to include more vegetables in the traditional meals we often consume, I decided to offer you an alternative of Olivier salad with root vegetables 🙂 They are seasonal and with so many benefits. This way we eat not only healthy but tasty and we take a lot of fiber, vitamins and minerals!

And the crackers turned out so tasty, quick and easy to make!🙂 Super crunchy for dipping!😊

Products for the salad
150 g pickles (cut into cubes)
100 g raw carrots (cut into cubes)
100 g celery root(cut into cubes)
50 g peas (cooked/canned)
1 egg (boiled)
50 g ham (finely chopped)
100 g sour cream

Method
Boil in salted water the carrots and the celery root for 30 minutes. In a bowl, mix the sour cream and the egg yolk, then add the other finely chopped products. Mix everything gently. If you wish you can add a bit of salt and a little vinegar (if the cucumbers are not very sour). Sprinkle the salad with fresh parsley.

You can have Olivier salad as it is or pair it with crackers below! 🙂

Crackers with nuts and seeds

Products
120 g nuts/seed mix (I used 65 g crushed walnuts and 55 g seed mix)
2 egg whites
10 g chickpea flour
spices: salt, fenugreek, turmeric, black pepper

Method
Mix the nuts/seeds with the egg whites and the chickpea flour. Season the mixture with salt, fenugreek, turmeric, and maybe black pepper. Spread on baking paper in a thin layer (I used a tray 20/30 cm). Bake at 200 degrees, upper and lower heat with a fan, for about 8 minutes. When cooled, break/cut into pieces.
