Gorgeous, the recipe of these pancakes it’s not ideologically new, but they are so colorful and full of spring, mood and sun that they lift the mood and ignite the inner sun! ☀😊🍀
Products (4 servings; 16 pcs.)
30-40 g baby spinach (without stalks)
250 ml milk
1 tbsp. vinegar
15 g melted butter
1 egg
130 g wholemeal flour (if it’s in lighter color, the green color will stand out more)
1 1/2 tsp baking powder
* Eggs and milk should be at room temperature
Method
Blend together the spinach, the egg and all the liquid ingredients (the milk, the vinegar and the melted butter). Blend them well to a smooth mixture, so that there are no parts of the spinach leaves. Using a separate bowl, mix the dry ingredients (the flour and the baking powder) and stir. Pour the blended liquid ingredients into the flour bowl and beat it all together by hand. Heat a frying pan (with a non-stick coating) on a medium heat (this is important so that the pancakes do not burn and become fluffy and keep their fresh green color :)). Spread a little fat (it is very convenient to use spray), add a little of the mixture to the heated pan (2-3 tablespoons for 1 pancake) and bake for about 2 minutes. Turn over the pancake and bake it on the other side until it becomes fluffy and ready on the inside 🙂 You will know that the pancake is ready to be turned over when air bubbles appear on top.
If your pan is bigger, you can make several pancakes at once 🙂
I got 16 mini fluffy pancakes with very delicate spinach taste. Mmmmmm!
You can eat them like this or add something according to your taste and mood: sour cream, honey/maple syrup, fruits, feta cheese, yellow cheese🙂
The taste is neutral, so the pancakes can be both sweet and sour 🙂
