Coconut Bites (balls) – Vegan, Raw If You Like, Gluten, Flour And Refined Sugar free

Gorgeous <3 the coconut bites are awesome! Soft and crunchy at the same time, because of the chia seeds. The taste is great and you can prepare them for a minute 🙂 and bake them for 7 minutes 🙂 Did I mention they are mega, hyper delicious 😀

Ingredients:

100 ml water
70 g pitted dates (it’s sweet enough)
20 g chia seeds
100 g shredded coconut (I add also coconut flakes in the total amount 100 g)

Directions:

In a food processor add the water and pitted dates and process for almost 1 minute. Pour the mixture in a bowl.

Add the chia seeds, stir with a spoon and leave it for 30-60 seconds. Add the coconut in the end and stir with a spoon until the coconut gets wet.

It may seem that the coconut is too much but keep stirring until the mixture looks like dough 🙂

Make bites (balls) or cookies.

If you like, you can eat the bites raw. Buuut, I love slightly baked coconut. Bake at 180C (350F) for 7 minutes in preheated oven. I baked mine for 12 minutes because I forgot them 🙂 In the edges they burned, I tried not to see it in the pictures (it didn’t happen 😀 ) 🙂 .

I used 70 g shredded coconut and 30 g coconut flakes (it’s bigger than the shredded coconut). You can use just shredded coconut.

It’s my favorite recipe now, it’s quick, easy and very, very delicious!

    These were excellent! However, I had to bake for about 40-50 minutes to get them brown around the edges at 350F. I also was using a double batch.
