Gorgeous, these cookies turned out super delicious. Many people tried them and they always want another one, and another one… When they are just out of the oven, they are crispy on the outside and soft on the inside. While they are baking you can smell the nice chocolate scent in the air. They are tasty both cold and warm.
You can prepare them very easily, just by hand and not using any utensils 🙂 .
!There is sugar in this recipe. I usually don’t use sugar in the recipes I prepare, I don’t have any sugar at home. The sugar comes from the dark chocolate.
Ingredients
100 g coconut butter, heated
50 g nut tahini (I used sesame, you can use peanut butter or other)
50 g maple syrup (you can swap with honey. But have in mind that we will bake the cookies so the honey will heat)
30 g (4 tbsp) grinded flax seed (I grind in the coffee grinder just before using)
100 g coconut flour (you can’t swap it with another flour, because it’s not flour but just coconut grinded)
30 g peeled hemp seeds
50-100 g dark chocolate
Optional: vanilla or cinnamon
Directions
Grind the flax seed, put it in a little bowl and pour over with 8 tbsp water. Mix and let it sit until it turns to jelly – this is the glue agent in the recipe, because there aren’t flour and eggs. There has to be something to glue the ingredients together. Let it sit for 3-4 minutes.
Combine the tahini, melted coconut butter, the maple syrup (honey) and the flax seed. Stir with a spoon. Add the coconut flour and stir again. Finally, add the hemp seed and the chocolate chips. Chop the chocolate with a knife.
I prepared two batches one with 100 and the other with 50 g chocolate. The cookies I prepared with 100 g chocolate were too sweet for me. But people that eat store bought treats liked the cookies A LOT.
50 g chocolate is better for my taste and to be honest, I want to say that it still tastes very sweet.
Shape 8-12 balls (depending on how big cookies you want) and squish like cookies.
Bake in a preheated oven to 170 C (340 F) for 15-20 minutes. I like when the ends get a little bit brown for 20 minutes so cookies are a bit crispy. But I also tested to bake for 15 minutes. Cookies are still delicious, but a little softer. Just because all ingredients can be eaten raw, baking makes the cookies taste better. So everyone can decide how to bake the cookies 🙂 .
Storage
The cookies disappeared in a day the first time I cooked them 🙂 . The second time, I put some away in box in the fridge and they got hard a little bit. I put them out on the kitchen board and they soften. The texture of the cookies changes if you keep them in the fridge or outside.
