Gorgeous 💗, these muffins are irresistible, especially when warm! Very tasty, juicy (without being wet, chia helps with that) and soft 🙂 The children fall in love with them and ask for more!
Ingredients
2 eggs
100 g dates (measured pitted)
100 g yogurt
15 g chia
30 g butter (melted)
100 g fresh blueberries (I have not tried frozen, but it should do)
50 g einkorn flour
1 tsp baking powder
Preparation
Blend dates, eggs and yogurt. Add the chia to the mixture and wait for 10-15 minutes for it to swell. Then add the melted butter, baking powder, blueberries and mix. A typical cake mixture is obtained. Transfer it into muffin tins (6 pcs.). Bake for about 25-30 minutes (depending on the strength of the oven) in a preheated oven.
Muffins have a very balanced taste, softness, aroma and texture 🙂 Liked by children and people who are not fans of healthy desserts 🙂
