Gorgeous ❤️ Here is my other suggestion for you – cauliflower pancakes in 2 versions with mozzarella and minced meat feelings.
Option 1 (with mozzarella)
Products for 4 pancakes
375 g cauliflower
1 egg
1 tbsp. husk
20 g yellow chees/parmesan
Salt
Filling products
15 g butter
70 g mozzarella/cheese
30 g parmesan/yellow cheese for sprinkling
150 g mushrooms (mushrooms)
50 g baby spinach
garlic
fresh basil
pepper
Method
Clean off the cauliflower leaves, stem and tough stalks. Divide it into florets and prepare a “rice” from it (see how here). Add the egg, the husk and the yellow cheese to the “rice”. Mix with a spoon until you get a homogeneous mixture. The mixture becomes dry and crumbly, but don’t worry 🙂 When you bake the pancake, you can easily fold it in half. Spread the pancakes on a tray lined with baking paper, leaving space between them. To form same size pancakes, you can use a ring (I personally used a 9 cm ring), but if you don’t have one, you can also use a bowl. Fill the mixture into the bowl, turn over on the paper, spread evenly by hand in order to obtain circles with about 15 cm diameter. Bake in a preheated oven (180˚) for about 20 minutes, until slightly golden.
During the baking time, prepare the filling. In a pan, stew with a little water and 1 tbsp. olive oil the mushrooms and the pre-cut into crescents garlic. Once the mushrooms are ready, turn off the stove. Add the spinach and stir. Spread the mixture on the baked pancakes. Add mozzarella, basil, black pepper (or other spices to taste) and roll the pancakes in 2 like an omelet. Sprinkle with parmesan/yellow cheese. Return to the oven for about 5 minutes until the mozzarella is melted. The pancakes become slightly crumbly, but they won’t fall apart 🙂

Option 2 (with minced beef)
Prepare the pancakes as described above.
Filling products
150 g minced beef
30 g parmesan/yellow cheese
10 g butter
150 g mushrooms
garlic
onions
50 g baby spinach
parsley
dill
pepper
Preparation of the filling
Season the minced beef (I advise you not to buy ready-made minced meat, but to ask the shop employees to grind the meat for you) with spices (I used cumin, black pepper, savory and oregano). Then, in a little water and 10 g butter, stew the remaining vegetables (without the spinach) until they are cooked. Turn off the heat, add the spinach and the other greens (parsley, dill). Distribute the filling evenly over the ready pancakes and sprinkle with parmesan/yellow cheese. After folding in 2, you can return the pancakes to the oven for a while, enough to absorb the aroma of the filling. But this step can be skipped.
