It takes 25-30 minutes in total to make them: 5-10 minutes of preparation and 20 minutes of baking. Great idea for a super vitamin breakfast-lunch bomb, suitable for the whole family. I tested them on children who do not like cauliflower, and they approved them, just do not tell them what’s inside :)))))))
200 g cauliflower “rice”
80 g grated yellow cheese
50 g rice flour
50 g chopped spinach
½ tsp soda
How to make cauliflower “rice”
Take a head of cauliflower, clean the leaves, cut the stem and the tougher stalks. Chop into small pieces and blend until the cauliflower is finely chopped. The cauliflower “rice” is ready 🙂 It is prepared in 1 minute and you can use it as a base for many dishes!
Using a fork, mix all products in a bowl until you get a homogeneous mixture. There is no need to cut the spinach into very small pieces. They feel great and complement very well with the taste of cauliflower. Divide the ready mixture into 7 muffin tins. Bake for about 20 minutes in a preheated to 180-degree oven. The muffins become soft, airy and super fresh 🙂 They are slightly moist because of the many vegetables in them. Enjoy!
Ideas 🙂 Salty muffins with cauliflower and spinach go well with milk (garlic) sauce and salad with tomatoes, basil and baby spinach. Instead of muffins, you can make a salty cake. In this case, allow a little longer baking time.
