Summer Apricot Cookies, Sugar and Gluten Free

Gorgeous, these cookies are a great sweet temptation. No sugar added, sweet only by apricots. They are quick and easy for preparing, and I think they are beautiful and tempting for children as well.

Please let me know, if kids like them. I’m very glad to create a recipe suitable for children, not only in composition, but also in appearance.

Cookies are soft. They are not dense and floury as a typical cookie. They are more airy.

Ingredients
6 eggs
300 g dried apricots (not cultivated are brown, not orange)/dates
150 g flour (I used spelt to be less gluten-free, use rice flour for gluten-free)
1 tsp baking powder
Fresh apricots for decoration, you can put more than half on each cookie.

Preparation
Mix the eggs with the dried apricots in the food processor with the S-shaped knife. It takes a little bit more time, because the apricots are solid. Then add the flour and baking powder and crumble until it is well absorbed (it’s quickly).

Baking
Take out the mixture with a spoon and put it in a tray, slightly flatten the cookies to make them look like biscuits. Leave 1.5 fingers between the cookies, because they swell and stick together. Put half fresh apricot on each cookie. Apricots can be cut into pieces and sprinkled on the cookies. You can put more apricots, than me.
It can also be baked as a cake, decorated with apricots.
Bake in preheated oven (170C/338F) for about 15-20 minutes. I baked 20 minutes, because I wanted bottom to catch a thin crust.
